I grew up on Star Trek, and though the execrable handling of the franchise during Voyager and Enterprise kind of killed my interest in the new stuff coming out of the franchise. But I still like to read the occasional fanfic, and like Star Wars, I haven't seen that many rec pages out there for Star Trek fanfic. So here's my two cents on the subject.
First and foremost is Zakhad's Captain and Counselor series. This series goes AU shortly after the series ends. Riker and Crusher have left the ship, and Picard and Troi find themselves falling in love. Sounds farfetched, I know, but Zakhad can make it work. Also, it's not just about the pairing--there's a lot of action and adventure in there if that's your thing. Characters in this series are allowed to grow and change as they never could in the series, and they deal with all kinds of trauma that just got ignored on the show. In the later stories she deals too much with Section 31 imho, but that's a minor flaw.
Wildcat's Spock/Uhura series. It's a well-written look at how a relationship between these two characters might have developed, and she slips it into the show's chronology almost seamlessly. Both characters are well-written.
Macedon's Jeu Parti series:
Orfeo
Eye of the Storm
Anslem
These are slash, which I don't read much of. These are worth it. Jake Sisko meets a young Vulcan musician who isn't exactly your average Vulcan. The two chare a friendship which develops into something more as the two young men grow older. It's a fascinating look at Vulcan culture and ideals as well as a sweet romance with a touch of angst.
I wish Macedon was still writing. Here's another of his takes on Vulcan/Human relationships, this one involving OCs. In Wisdom and Beauty, the human was raised on Vulcan and understands Vulcans better than she does Humans.
